salmon-in-foil



  • 1 salmon fillet 1 1/2 - 2 pounds
  • 4 tablespoons butter melted
  • 2 teaspoons minced garlic
  • 2 teaspoons lemon zest
  • salt and pepper to taste
  • 1/4 cup chopped fresh dill
  • cooking spray
  • Optional garnish: lemon slices


How to Make It

  • Preheat the oven to 375 degrees. Line a sheet pan with foil and coat the foil with cooking spray.
  • In a small bowl mix together the butter, garlic, lemon zest and salt and pepper to taste.
  • Place the salmon on the foil and pour the butter mixture over the top. Cover the salmon with foil and bake for 15-20 minutes, or until fish is just done.
  • Turn over to broil. Uncover the fish and place on top rack; broil for 5 minutes or until lightly browned.
  • Remove from oven and sprinkle with dill. Add lemon slices for garnish and serve immediately.

    • 2 teaspoons olive oil
    • salt and pepper to taste
    • 1 pound ground beef I use 90% lean
    • 1 onion finely diced
    • 2 teaspoons minced garlic
    • 4 cups coarsely chopped green cabbage
    • 2 carrots peeled, quartered and sliced
    • 4 cups beef broth
    • 3 8 ounce cans tomato sauce
    • 1/2 cup uncooked long grain rice
    • 1 bay leaf
    • 3 tablespoons brown sugar
    • 2 tablespoons parsley


    How to Make It

  • Heat the olive oil in a large pot over medium high heat. Add the ground beef and season with salt and pepper to taste.
  • Cook, breaking up the meat with a spatula, until beef is browned, approximately 4-5 minutes. Add the onion and garlic cook for 2-3 minutes.
  • Add the cabbage, carrots, beef broth, tomato sauce, rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.
  • Bring to a simmer and cook for 25 minutes or until rice is tender. Remove bay leaf and discard.
  • Sprinkle with parsley and serve.

  • Not a fan of ground beef? Try ground turkey instead!
  • You can substitute brown rice for white rice, but that will require about 20 more minutes of cook time.

    perfect-lemon-curd



    • 3/4 cup fresh lemon juice
    • 1 tablespoon grated lemon zest
    • 3/4 cup sugar 3 eggs
    • 1/2 cup unsalted butter, cubed


    How to Make It

  • In a 2 quart saucepan, combine lemon juice, lemon zest, sugar, eggs, and butter. Cook over medium-low heat until thick enough to hold marks from whisk, and first bubble appears on surface, about 6 minutes.
