How to Make It
- Preheat oven to 350 degrees. Spray your muffin tins with non-stick cooking spray.

- 1 large onion, peeled, halved and thinly sliced
- salt and pepper
- 1 lb ground beef
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 4-8 slices American cheese
- Mayo, mustard and pickles, for serving
- 4 hamburger buns, toasted
How to Make It
- Combine the onion slices and 1 teaspoon of salt in a bowl and toss to combine. Transfer the onions to a colander and let sit for 30 minutes, tossing occasionally. Transfer the onions to a clean dish towel, gather the edges together and squeeze out as much liquid as you can from the onions. Do this over the sink or a large bowl since the onions will have quite a bit of liquid in them.
- Divide the onions into 4 separate mounds on a rimmed baking sheet. Form the beef into 4 lightly packed balls. Place the beef balls on top of the onion mounds and flatten the beef firmly (use your palm) so the onion adheres to the beef. The patties should measure 4 inches in diameter. Season the beef generously with salt and pepper.
- Melt the butter with the oil in a 12-inch skillet over medium heat. Using a large spatula, transfer the patties to the skillet, onion side down. Cook for 6-8 minutes, until the onions turn a deep golden brown and begin to crisp around the edges. Flip the burgers, then increase the heat to high and cook until well browned on the second side, about 2 minutes.
- Add 1 or 2 slices of cheese to each burger and allow to melt. Add mayo, mustard and pickles to the top buns, then place each burger on a bottom buns. Serve immediately.

How to Make It
- In a large skillet heat oil...add in the smoked sausage and cook, turning often till browned on edges. Remove meat from skillet and add in the potatoes and cook over med. high heat till they begin to brown and become tender. Add in the onions, pepper and garlic cooking for about 5 minutes then add in the chicken stock and cover. Cook for about 5-6 minutes, stirring occasionally. Remove cover and check potatoes for doneness. Add the spices, stir and add in the smoked sausage.
- 2½ cups White Lily self-rising flour
- ½ teaspoon salt
- 1 teaspoon sugar
- ½ cup butter
- 1 cup buttermilk
- 1 (3-ounce) jar diced pimentos, drained well
- 1½ cups shredded sharp cheddar cheese
How to Make It
- Preheat the oven to 475°. In a large bowl combine the self-rising flour, salt, and sugar. Add the butter, and cut it into the flour using a pastry cutter or large fork. The mixture should be crumbly. Stir in the buttermilk, pimentos, and cheese and mix until everything is just combined.
- Turn the dough out onto a well-floured surface. Knead the dough lightly, being sure to fold the dough in half 3 or 4 times. This helps create flaky layers. Gently roll the dough out to about ¾-inch thick. Use a biscuit cutter to cut the biscuits by pressing the cutter straight down. Do not twist the cutter. Transfer the biscuits to a baking pan. Bake the biscuits for 14 to 16 minutes or until just golden brown.

- Top with cheese.
- Bake in 350 degree oven for 25-30 minutes.

- 1 lb. (about 3 1/2 cups) powdered sugar

- 1/2 tsp. vanilla

- 2lbs chicken breast
- 8 potatoes
- 1/3 cup Olive Oil
- 1 1/2 tsp salt
- 1 TBS fresh Ground Pepper

- Bake the potatoes for 45 minutes, stir every 15 minutes
- Cube the chicken & add it to the bowl with the left over sauce
- Mix together cheese, bacon & green onion in a small separate bowl
- Once potatoes are done, add the uncooked marinated chicken
- Then layer the toppings over the chicken
- Bake for 15 minutes or until the chicken is cooked
- 5 large russet potatoes, peeled and sliced about 1/4-1/2 inch thick
- 2 -3 tablespoons chopped onions
- 1 lb ground beef ( really lean is preferable)
- salt and pepper
- Cheese sauce (the same one I use for macaroni and cheese)
- 2 cups milk ( I use skim)
- 3 tablespoons butter
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces shredded sharp cheddar cheese
- ketchup ( optional condiment)
How to Make It
- I use a 2 1/2 quart covered casserole dish for this. This will stick unless you have a great non-stick baking dish.
- Preheat oven to 350.
- Brown hamburger and onion.
- Place a layer of sliced potatoes in casserole dish, top with half of hamburger/onion mixture. Salt and pepper to taste (kind of depends on how salty your cheese sauce is - you can always salt it later if it needs it).
- Repeat layering of potato slices and hamburger mixture (and salt and pepper if desired).
- Make Cheese sauce:.
- Melt 3 T butter in saucepan over med-high heat.
- Add 3 T flour, and the salt and pepper. Stir quickly to blend.
- Add 2 cups milk; stir with whisk to incorporate butter/flour mixture.
- Reduce heat, stir till thickened and bubbly.
- Remove from heat and add shredded cheddar. Stir until cheese melts.
- Pour cheese sauce over hamburger and potatoes in baking dish. Push potatoes around to let cheese sauce into all of the crevices so it's well coated.
- Cover and place in oven. Bake for about 1 1/2 hours, till potatoes are tender and top is browned. I like to take off the lid for the last 20 minutes or so to brown the top a bit.
- Even with the leanest ground beef, this can get little pools of grease on top - I just spoon these off. It doesn't mean the whole thing is greasy - just cheesy.
- My family members consider generous amounts of ketchup a necessary addition to this dish. I like it fine by itself (ok, maybe a spot of ketchup on the side).
